I was curious about the lack of eggs in the cupcake recipe. I kinda thought eggs were essential to making cake?
Applesauce (as well as soda!) can be substituted for eggs. It reduces the cholesterol and sodium content of the cupcakes, as well as making them vegan! The main purpose of the eggs is to add moisture to the cake, so non-flavored (“natural”) applesauce is a great replacement.
